It might not be easy being green for Kermit the Frog, but for Mary Cleaver, the owner of The Cleaver Co., New York’s hottest eco-catering and event planning business that showcases organic, local, and sustainable foods, it comes naturally.
“We wanted to figure out how to get more farm product into the city,” explains Cleaver of her catering philosophy. And so she partnered with Farm to Chef to bring the best of New York produce and foodstuffs to her clients, who have ranged from individuals like Martin Scorcese and the Dalai Lama to corporations including Microsoft and The Nation Institute.
Weddings are another of Cleaver’s specialties and she has partnered with 632 on Hudson to produce eco-friendly weddings that don’t skimp on style or taste (indeed, fare may include such signature treats as mahi-mahi wrapped in banana leaves with a passion fruit beurre blanc and Hudson Valley kir royales). Cleaver also works with many of the farmers from New York’s Greenmarkets to highlight the bounty of the season (so expect ramps and earthy asparagus in spring and lush cherries and juicy tomatoes in the summer).
While The Cleaver Co works with each client individually on creating a unique event, expect to pay $250 per person for a wedding or about $100 per person for a cocktail reception.
Don’t have any parties to throw in the near future but still want to sample Cleaver’s delicious food? Then head to The Green Table, her cozy organic eatery in the Chelsea Market. While the menu changes according the season, expect chic comfort fare like pan seared sea scallops with braised Tuscan kale, blood orange vinaigrette and toasted pine nuts and pot pie made with organic mushrooms and accompanied by fresh market greens.
