Tillman’s Grilled Cheese Perfection
French Onion Grilled Cheese with Spiced Jus

Spiced Jus:
2 sweet onions
2 celery stalks
3 garlic cloves
Canola oil
4 cups chicken stock
Chop onions and celery stalks and sauté with garlic cloves in canola oil until translucent. Add chicken stock to pot and bring to boil for 30 minutes. Strain jus.
Onion Compote:
2 sweet onions
1 garlic clove
1 tablespoon butter
1 teaspoon sugar
Salt and pepper, as needed
1 sprig lavender
1 sprig thyme
1 rosemary stem
Chop vegetables and place in pot with melted butter. Season with salt, pepper and sugar. Add lavender, thyme and rosemary. Sauté vegetables on low heat until caramelized.
Assembly:
Minced garlic, to taste
1 teaspoon each minced parsley and thyme
2 tablespoons butter, room-temperature
2 slices country white bread, 1/4-inch thick
4 slices Gruyère cheese
2 tablespoons onion compote
2 cups spiced jus
Mix garlic, parsley and thyme into butter and season with salt and pepper. Spread the garlic butter and onion compote on all slices of bread then top with Gruyère cheese. Close sandwich and grill on both sides in a pan with melted butter as with traditional grilled cheese. Both sides of the sandwiches should be golden brown with cheese oozing out.
